Aspen’s Paepcke Park provides a picturesque setting for the town’s newest boutique hotel, Mollie Aspen. Designed by CCY Architects and Post Company, the quietly luxurious property’s 68 guest rooms and common spaces—including a restaurant, café and bar with menus curated by Gin & Luck—give a subtle nod to Scandinavian and Japanese aesthetics. Understated white oak, terra-cotta and sand-cast brass finishes define the interiors, which also feature large windows to highlight the stunning Aspen views.

Meanwhile, in Denver, Lyon Porter and Jersey Banks, cofounders of boutique hotel and lifestyle brand Urban Cowboy, recently worked their magic on the Mile High City’s landmarked George Schleier Mansion. The Gilded Age property has transformed into a 16-room boutique hotel, bar and restaurant. There, painstakingly preserved period details including an intricately carved wooden staircase and a 19th-century bar create a historic backdrop for such custom touches as hand-hammered copper soaking tubs and wallpaper that celebrates Denver’s place in the West.
