The 271-room hotel’s restaurant, Onda–Spanish for “wave”–is headed by chefs Jessica Koslow of Sqirl and Gabriela Camara, formerly of Cala in San Francisco and Contramar in Mexico City, so expect a menu that fuses Latin and Californian influences.
